There is a moment, every year, when Tuscia holds its breath. The days grow shorter, the light turns golden and low, and among the silvery rows of the olive groves an ancient ritual returns, one that has been repeating for over two thousand years: the olive harvest. It is the moment when the land gives back its most precious fruit — and at Podere dell'Arco, it may be the most authentic time of year to slow down and truly experience the Tuscia countryside.

When the olives are harvested in Tuscia

The harvest calendar follows the ripening of the fruit, and in Tuscia it runs from October to January.

The early varieties — such as Leccino, Frantoio, Maurino and Pendolino — are picked from the beginning of ripening until mid-December, when the olive is still green: this is the so-called early harvest, which yields oils with a more intense, grassy and pleasantly bitter profile.

The late varieties, first among them the historic Caninese, can instead be harvested into January, when the olive turns towards veraison and the oil gains roundness and softness.

Our tip? October and November are the most captivating months to visit Tuscia: the landscape is at the height of its autumn splendour, and the mills are alive with the air of the new olive-oil season.


Where: Tuscia, a land of olive oil for three thousand years

Olive growing in this corner of Lazio is no recent trend. In Tuscia the olive tree has been cultivated since the 6th century BC, when the Etruscans spread its care, encouraged by trade with the Greeks and Phoenicians. To this day, olive stones found in the excavations of southern Etruria and the paintings in Etruscan tombs bear witness to how deep this vocation runs.

The olive-growing heart of the province of Viterbo is protected today by two denominations of excellence:


  • DOP Tuscia oil, which spans 52 municipalities of the Viterbo area and is produced mainly from the Frantoio, Leccino and Caninese varieties. It is recognised by its emerald-green colour with golden reflections, its fruity aroma and its balanced taste, with that harmonious bitter-and-spicy finish that is the signature of a fine oil.

  • DOP Canino oil, one of the first protected-origin olive oils recognised in Italy, tied to the territory of Canino and its neighbouring towns, where the Caninese variety finds ideal volcanic soils.

It is in this terroir — among volcanic hills and ancient villages — that the roots of our own olive groves also lie.


How the harvest unfolds

Harvesting olives is a slow, careful gesture that still preserves its almost ritual dimension.

The olives are picked straight from the tree — by hand or with mechanical aids — and gathered onto wide nets spread at the foot of the trees. The golden rule for a great oil is speed: the olives must reach the mill within a few hours of picking, to be washed, de-leafed and cold-pressed before oxidation can compromise their aromas and properties.

It is from this race against time — from tree to mill in a single day — that the new oil is born: dense, green and wonderfully fragrant, best tasted on a simple slice of warm bread.
